Would it be possible to get a changelog of what’s new/changed/removed in each new version? (e.g. similar to https://www.gl-inet.com/forums/topic/please-upgrade-to-firmware-v2-25-asap/)

It could either be a changelog.txt file in GL.iNet download center, or the above linked thread could be converted into a “What’s new in v____” thread.

No. There are so many changes being done daily. Release notes will be updated for the stable releases only
