Is there a way to configure a home server setup using 2 travel routers (slate ax + beryl ax) while being connected to my preinstalled xfinity gateway (xb8). I'd like to avoid purchasing a flint.

Yes it doesn't matter what router you use since they can all act as servers and clients.
You will need to do the port forwarding for the server in the Xfinity app using the port you specify on the WireGuard page (default 51820) and the UDP protocol.
