You need to download the tor firmware directly.
Tor itself doesn’t have an UI

Sorry for the noob question: if I flash the TOR firmware would it replace the default admin UI? I mean will I lose all the options in the web ui?

Yes, that is correctly. Tor has its own UI.

SS is in the firmware already. You need to configure using Luci.
