I configured the hardware switch on the side as a Tor toggle but I noticed this behavior:
Switch toggle down->up : starting Tor
This works (loading Tor in about 2-4 minutes)
Switch toggle up->down : says "stopping Tor"
Does not work because the IP remains a Tor exit node.
The only reliable way to switch off Tor is by powering down the Mudi and start it again (not auto loading Tor)
What can I do?

If the Tor running, the processes list will be shown the Tor process:
I just tested here, up is on/enable, down is off/disable.
did you mean if that switch moves to off/down or disable in the WebUI, but the Tor is not really disable, the process of Tor have not killed?
I checked local, no issue of the Tor if disable:
