Should I use the update packages ability in LuCI? I show packages available but AI told me with them being Qualcomm related that it could be risky.

Short answer: NO!
Never ever update packages using LuCI when you are using the GL firmware. Wait for a newer release that might include those packages - that is the way to go when using the official firmware.

Well, maybe the longer answer is if you install packages that are not native to the GL firmware. Nano, Vnstat and Adblock come to mind. User discretion advised.
Like always: If you know what you are doing, go for it.
If you have to ask AI before: Don't.
