I'm looking for a router for my exhibition trailer that will wirelessly connect to a starlink and allow for a guests wifi to access the internet. It would be helpful to be able to limit the amount of data that the guests connected to wifi are allowed to use whilst allowing myself full data

This feature is not supported for the time being.
You can Google if there are third-party plugins that can meet your needs.

The GL.iNet GL-X3000 (Spitz AX) 5G NR AX3000 Cellular Router can be used to achieve your purpose if you are using the Starlink Gen 3 router.
Connect an ethernet cable between the Gen3 lan to the Spitz wan.
Use the Spitz Guest Wifi 2.4GHz or 5GHz. You can limit your guest data usage from the Clients List.
