When configured in AP mode the UI is not available. How does one configure the settings on the WIRELESS page if the UI isn't accessible (i.e. change the SSID)?
By resetting the network mode, setting up everything and then select the mode you need.
I've never used a router with this limitation before. I can understand not being able to access certain functionality when set to AP mode, but not the entire UI.

I don't get why they say this, it's not like that.
You need to know the new IP and you can access the gui/ssh just fine.
Set it before changing to ap mode or check in your main router/dhcp the new one.
That's all.
Yeah, this works sometimes as well - but highly depends on the upstream network. So in general resetting the network mode is more easy.
Or you could bind the device to GoodCloud, so you can still control it.
