The One is very new and the only changes I’ve made from the defaults are setting a couple static IPs and port forwards, adding a guest network according to the OpenWrt docs, and installing/enabling the adblock app. I also changed the subnet from the default 192.168.1.1 to 192.168.8.1.

This reads that you've set the OWRT One to 192.168.8.0/24. Keep in mind that's the default subnet for GL's firmware.
