Please share the SIM operator, your used APN and the settings of this card.
In which country are you located?

Please do all testing with a freshly reset device, so no other options might be an issue. Start slow by just getting cellular to work, no VPN, no AGH, nothing else. Include screenshots of the main screen showing the message and the connection state.

Share your results and the logs then.

Will reset the device for the third time in 72 hours now.

Please include a screenshot of the connection details on the routers dashboard.
Include the logs from the log section as well - it's necessary to understand what is going on.

Resetting the device and choosing auto setup has it working for now, however I have been through the same routine at least 5 times in 6 months. The real test is when I turn the device off for a few hours/days. Will it work when I need it to?

I have not configured the VPN settings on the device which is something that I would like to be able to do without worrying about the router acting up.

Sorry I was travelling. The log does not see the problem unfortunately. Assuming that you reboot the devices and the original log is gone.

So you have the problems repeated for 5 times in the last 6 months for the same SIM card?

If that happens, pls check:

  1. Click Manual setup and check if all the settings are correct, especially the apn. So as you said it will go to this state after turnned off for hours, you can do a further check?
  2. Check the signal levels to see if the signal is good.
  3. To get the correct log, export the log before reboot. Otherwise the useful log is gone.

Checked the attached syslog, there is not issue occurs.

Please according to Alfie's suggestion, check the APN profile is correct when it rebooted, modem signal strength, and SIM card status (GL GUI > Internet > Modem > Tool > AT command: AT+CPIN?).

Please export the syslog when the issue occurs, and please let us try to check why the modem drops the connection.
