Can you tell me which router model this is?
This is not clear to me, OpenWrt uses OpenWrt 24, this means you may are on a wrong router platform this is why I ask.
Normally if you want to upgrade from gl firmware to vanilla openwrt, this can be done just like uploading the firmware as how that would work with the gl firmware, if you see errors don't proceed further and do it via U-boot if you verified the image is correct this likely only does that if the partitions are different, from my own experience never seen this occur on gl routers but that can cause issues.
The only importance is that you cannot keep the configuration because these probably are not compatible and could cause loops softbricking the device.
And you also want to use the sysupgrade images exclusively, using the factory ones will erase U-boot which is the handy recovery mode with gui, and you will be forced to use OpenWrts version with only tftp and there are probably no clear ways to bring U-boot back.
Snapshots on OpenWrt don't have a UI, so keep it solely on releases or you can use the image creation tool.

I often don't use the firmware selector, I just visit https://downloads.openwrt.org and navigate by platform, you can find these data on the ToH wiki of OpenWrt.
No. Only GL firmwares contain the GL GUI.
If there is no 24.xx firmware for your device precompiled by GL, you can't.
