I see the Comet is now available for preorder and I have been looking into getting one. I see there is an app for both Windows and macOS for remote control. Will there be an option to connect to the Comet from ChromeOS or from Linux? If that is an option I will for sure order multiple units.
Currently there is no control software for Chrome OS or Linux.
We will develop Linux software in later stage.

Is an iOS app in development as well? And one feature I would love to see is the option to connect to 2 devices at once and display them side by side or with the option to swap displays, for example if I connect 2 comets to the same PC (which I will definitely do for a few of my clients)

You can configure tailscale and access comet through the browser
Tailscale on router with a few settings is a pretty good way to tunnel to lan.
For a beta feature it seems to work well

It is really easy nut absolutely useless if you want to use the touchscreen on your phone as mouse configuration and all other controls are not suitable for touchscreen devices.
