Is there a reason why we haven't seen any Firmware update for the GL-X3000? Not even security patches? Is the router safe to use after such a long time with no updates? Thanks

It mostly is, yes.
That's because of how a router works. There are not many exposed services, so there isn't much place to attack. As long as there are no security issues within the exposed services (like dhcpd, dnsmasq or the network driver itself) everything is fine.
I’d say that most Wi-Fi devices rarely receive updates. If you look at the Openwrt security patch list, most of the issues seem to be related to local risks that require direct access rather than external issues through the WAN. In general, any router based on Openwrt is probably above average in terms of internet security.
I’d also suggest that it’s more important to keep your lan systems safe by not installing questionable apps or clicking random links - that’s how the majority of intrusions occur by inviting them in.
You're spoiled by the constant updates on your phones. This is a router, with few services exposed (or none, depending on your usage). If they haven't been detected, why even have a patch?
You'd be surprised to know that reputable manufacturers don't release updates for 6 months and only release security patches when a vulnerability (CVE's) is detected.
