I'm trying to connect to my phone's hotspot and I don't see it listed under wifi networks of the router. However, I do see listed when I open my wifi settings on my laptop and I'm able to connect to it.

iPhone uses channel 136 which is not allowed to be repeated in most countries. That's why you don't see it, mostly. And it's DFS, afaik.
Go USB tethering should solve the issue. Compatibility mode on iPhone hotspot might solve it as well.
