The SIMPoYO uFi can work with the SIMPoYO Physical eSIM Card, but it does not support eSIM profile management features.
You may need to use an Android phone to manage these profiles. For details, please refer to: How to use the eSIM Physical Card with Android devices

I think there may have been a misunderstanding.
The eSIM Management option only appears when the physical eSIM is inserted directly into one of our cellular routers that supports eSIM management. You can find the specific list of supported devices here: How to use eSIM Physical Card with GL.iNet Routers
Using it through the SIMPoYO uFi does not support eSIM management because the router cannot interact directly with the cellular module in that configuration.
I also thought that but… worth a try.
However, alternative scenario:
Using the eSIM first in my android Oneplus Nord 3 phone to download, manage, etc the profiles and then to put it in the Dongle? Is it doable? I mean, I will be able to use it like a normal SIM card, seeing in the Dongle setting interface the info for the eSIM profile that was last enabled In my phone.

Yes, your understanding is correct.
You can download, activate and manage the eSIM profile on an Android phone first, then insert the card into the uFi for use. The profile that was last activated on the phone will be the one that remains active and functional.
