I connected a logitech USB 720p cam to the MT300N-V2 and the video format displayed as 640x480. Is there a way to display the cam in its native format, such as 720p 1080p or high resolution? What package do I need to install to support record onto a samba share?

The mini router doesn’t have too much power to do video processing. The video is mjpeg format which is not compressed.
You can change the resolution in the UI but I cannot ensure it works good. The mjpg-streamer is able to record to a file but should not support samba share.
