Hi - I just got the GL-MT3000. I seem to be able to use the same SSID for both the 2.4 and 5 networks. But I am curious…when I do so, will devices that can access 5GHz automatically use the 5GHz network?

Depends on the device.
OpenWrt does not support band steering out-of-the-box, so it’s only the device that decides to connect to which band.
In most cases the more stable band will be used, which is often 2.4

Yes, depending on the devices as said @admon .
I used the same SSID and password on my Flint 2. It is working and my phone showing
Other devices will auto-connect 2.4Ghz such like old CCTV cameras.
