Is there any reason why a Flint 2 used in the UK would have the Country Code set to DE?
I've changed this in Luci to use Great Britain 'GB'
I'm assuming this has no real effect as we still use European WiFi standards?

imho there are differences between EU and GB especially in the 5GHz channels.
Using the wrong country-code may cause huge problems with the authorities.

The UK's Ofcom regulations for unlicensed use of the 5 GHz band is similar to Europe, except that DFS is not required for the frequency range 5.725–5.850 GHz and the SRD maximum mean e.i.r.p is 200 mW instead of 25 mW.
Additionally, 5.925–6.425 GHz is also available for unlicensed use, as long as it is used indoors with an SRD of 250 mW.

What DE does:
Germany
Germany requires DFS and TPC capabilities on 5.250–5.350 GHz and 5.470–5.725 GHz as well; in addition, the frequency range 5.150–5.350 GHz is allowed only for indoor use, leaving only 5.470–5.725 GHz for outdoor and indoor use.
Since this is the German implementation of EU Rule 2005/513/EC, similar regulations must be expected throughout the European Union.
European standard [EN] 301 893 covers 5.15–5.725 GHz operation, and as of 23 May 2017 v2.1.1 has been adopted. 6 GHz can now be used.
So by setting the MT6000 to DE, GL are covering selling the MT6000 in Europe, what's causing a problem is that in the UK, DFS is not required for channels 149 to 165 on 5Ghz and the srd should be 200 mW not 25mW as in Germany, plus Apple devices will complain if the connected router is not transmitting the same Country Code as neighbouring routers

Missing Channels
I've noticed both in the UI and Luci that you can't select any channel past 128 on the 5GHZ

Channels 149 to 165 are available in the UK, without DFS.
@Jbennett360 I can only get 149 to 165 working if I choose 80 Mhz for the 5Ghz radio

I was only using 80Mhz width and mine wasn't showing anything after 128.
Tbh, I've just been plagued with Wi-Fi issues from the off. Had more this afternoon too, connected with no Internet, slow speeds again.
I've boxed it up and it's going back.
I want to like it, but the reliability just feels really bad. It's a shame!

I do not own the MT6000, I have a couple of MT3000, two B3000, two b2200, X2000 and 4 SFT1200s.
I can get the 149 to 165 channels working on all the above.
did you try a reboot?
Yep.
All producing the same results.
It is disappointing because the coverage on this thing is incredible and it means I don't need an Extender/Access Point configured elsewhere. But at the same time, I value reliability over anything and this clearly struggles.

In that case, OpenWrt seems not to support the special UK Wi-Fi regulations.
