(I've looked through the forums, and have already attempted the port forwarding but my issue still remains)
I'd like to start by saying my knowledge isn't great, I bought this router in an attempt to change this, and although I've opened ports etc before I'm just having issues this time around.
My current setup is as follows: ISP router in modem mode > Flint 2 > GL-MT3000 (in WDS mode) > Mac Mini as Plex server.
I had already opened the relevant ports in the router settings (Flint 2) and checked the forms to find GL-Inet Plex Remote Access confirming my actions were correct but it keeps losing connection so my assumption is it has to be an issue with the GL-MT3000 being used in WDS mode (unable to run an ethernet and using it this way more than doubles the wifi speed I was getting)
Any assistance would be great.

You will need to open the ports on both routers, the Flint and the MT3000.
Flint --> Port-Forwarding to MT3000
MT3000 --> Port-Forwarding to Mac
It will cause double NAT, which might be part of the problem, but should work anyway.
Might be a better way to set the MT3000 into extender mode to get around this.
The ISP is all good with Port Forwarding. I've tried the Flint to MT3000 and MT3000 to Mac, and it still had issues. I might not have left it long enough for the Plex server to reboot, so I'll give it another crack.
Why would it double NAT if it's in WDS/Repeater mode, I didn't think this would be an issue if it's just repeating from the Flint?
Yeah, so I thought in WDS / Repeater / Extender mode, the MT3000 wouldn't create its own subnet; it just repeats the signal from the Flint 2. But in your first message, you said it would create a double NAT issue?
WDS is similar to Extender / Repeater? So my setup as it is wouldn't cause a double NAT issue as the MT3000 is already in WDS mode.
